Philippe Delgrange grew up just north of Paris in Cambrai, France. At the age of 18, he came to the US and spent his early years working in a perfume factory. When the New York City club scene emerged in the 1970’s, Philippe was getting his first taste for the restaurant industry working at a venue that would become the famous Atrium Club. Shortly thereafter, celebrity night club owner Regine came calling, followed by Madison Avenue’s most famous French eatery, Le Relais. The urge to start his own establishment was too strong, so in 1985 Philippe opened Le Bilboquet on
63rd Street with just 35 seats.

Today, Le Bilboquet resides on 60th street with more than 120 seats and is considered to be one of the most difficult reservations to book in Manhattan. Thanks to our incredible partners Ron Perlman, Eric Clapton, and Steven Witkoff, Le Bilboquet is not only a beloved neighborhood French bistro, but a true New York City Institution. The success of 60th Street has allowed Le Bilboquet to expand to Dallas, Atlanta, The Hamptons, Denver, and Palm Beach. Each location is inspired by the surrounding way of life, but they all pay homage to the elegance and exclusivity of the original Bilboquet.
